Pineapple tarts

Biscuit-
200g flour
I egg
Half tbsp water
100g butter
1/4 salt teaspoon
Mix ingredients together . Add the salt to flour, then the butter to the flour mix it.

Add the water and the egg and mix and make the dough. Softly toss. Wrap in cling wrap and place in fridge for 30 mins.
While this is firming in refrigerator
Make the jam
3 slices of finely chopped pineapple ( or you can use a small crushed can of pineapples)
60g of sugar
1/4 tsp of cinnamon powder
Cook the above ingredients in a pot until it darkens and then let it rest for 15 mins to cool.

Then take the dough out and roll it with a roller and cut the shapes for the Cookie. Then add the jam to the cookie shapes
Use a brush and brush the cookie with egg to add the browning colour when baked .
Bake for 25 mins In a 180c over
Take out and cool

This is my favorite cookie in the world . I used to buy it in Malaysia when I lived there and could eat a whole pot full. I had to learn how to make it so I could eat it anytime.
It’s quick and easy to make .
