Ingredients

1kg Carrot
3kg Chicken chunks
1tblsp Chicken Powder
1st half Coconut milk
2nd half Coconut milk
1 teaspoon Curry Herb
1 teaspoon Curry Paste
100g Garlic
300g Khmer Herb
300g Long Bean
50g Preserved fish (Prohouk)
10 Red Chili Peppers
150g Roasted Peanuts
1.5 teaspoon Salt
1tblsp Shrimp Paste
1kg Sweet Potatoes

Best Red Curry

This recipe comes from Voeut Sat of Cambodia.  She definitely makes the best red curry I have ever tasted.

Notes: for the Coconut Milk we need to split the 1 Coconut into 2 halves. We can refer to them as being the first half & the second half of coconut milk.

1. Firstly, we put in the Red Peppers, stir and cook for 2 minutes.
2. Next, we put in the Palm Sugar. Stir and cook for about 1 minute.
3. Add the Khmer Herb, Curry Herb (take only water), Curry Paste, Shrimp Paste and stir all for about 2 minutes.
4. Add 1/3 of the first half of coconut milk, a little bit with chicken, Pork Ribs, Chicken Powder and stir for about 2 minutes.
5. Add 1/3 of the first half of coconut milk a bit and keep cooking for 3 minutes.
6. Add the carrot and cook for 3 minutes.
7. Add our Sweet Potatoes, regular potatoes, the first half of second half of coconut milk, & the long beans and cook another 5 minutes.

Khmer Long Beans

8. Add the garlic and cook for another 2 minutes.
9. Take a sample tasting now.
10. When all of the vegetables​​ ​​are boiled, put in the remainder of second half of the coconut milk & cook another 5 minutes.
