Directions
I make these and put them in the freezer and then heat them up .
I make 20 at a time . I make these for my kid’s lunch . I like to put something different in her lunch box daily . I don’t like her buying hot lunch .
Ingredients:
1 cup of crab meat ( you can buy raw crab and take the meat out or buy just frozen crab meat alone )
1 large onion finely chopped
1 clove of garlic finely chopped
1/4 cup of finely chopped parsley or coriander leaves.
1 egg
1/2 cup of white flour
1 cup of bread crumbs
1/4 teaspoon of salt
1/4 teaspoon of chili powder
1/4 teaspoon of ground cumin
Mix the crab meat with the onions , garlic , parsley, salt , cumin and chili powder . Mix it in well and make it into round balls .
Break the egg and beat it up into a bowl .
Place the flour on a plate separately and the breadcrumbs as well .
Roll the crab cake in the flour and then wash it with the egg and then finally cover it with breadcrumbs .
Leave all on a plate and put in fridge for 1/2 hour .
Later put them into Separate zip lock bags and place in freezer .
I usually take them out in the morning and put them in the over to bake for about 45 minutes at 350 degrees F .
You can deep fry them too . But for me, the oven is cleaner and less work . By the time I am dressed for work the cakes are ready to be placed into the lunch box for school .
Make them over the weekend so you don’t have much work to do during the week . 😉
