Mussels with wine and garlic

  • 1 pound of mussels scrubbed
  • ¼ cup of extra virgin olive oil
  • 2 tablespoons of unsalted butter
  • 6 cloves of garlic, thinly sliced (3 tablespoon)
  • 1 pint Cherry tomatoes quartered.
  • ½ of white wine, such as Sauvignon Blanc
  • Chopped flat leave parsley

Set the pot to heat. Place butter and olive oil into pot. Add garlic cook until golden.  Stir in tomatoes and wine; season with salt and pepper to taste. Cover and cook for about 3 minutes.

Stir in Mussels and cover and cook for about 5 mins.

Throw away mussels that have not opened up. Plate and eat with bread. Serve with parsley.
