Ingredients for pork with greens:

  • 1-1/3 pound pork tenderloin
  • 3 Tbsp sambal oelek
  • 2 Tbsp Brown sugar
  • 1 Tbsp of grated Ginger
  • 1 Tbsp of Grated Garlic
  • 4 Tbsp of Soy Sauce
  • 2 Tsp of Sesame oil
  • 2 Medium Carrots and thinly sliced
  • 1 bunch of kale sliced
  • 1 Tbsp of vinegar
  • 3 Tbsp of thinly sliced Spring Onions
  • 2 cups of white rice cooked  for serving

Slice the pork tenderloin in thin slices. Combine the sambal oelek, brown sugar,Garlic, Ginger and sesame oil with the pork.

Use a skillet with a little Vegetable or Canola oil ( 3 tablespoon) and add the pork marinated into the skillet and cook it till slightly brown. Remove when cooked. It should take about 15 mins because the meat is very thin.


Then use the same pan and add the vegetables and stir fry it , tossing it , until crisp and tender.

Combine the vinegar and soy sauce as an accompaniment.

Place the rice in a small bowl, add the pork and vegetable to it and drizzle the sauce onto it.

Ready to serve.
If you like it spicy, cut some jalapeño peppers and add as needed.
